1 C. chopped onion
1 C. chopped red pepper
1/2 C. chopped green pepper
1-4oz. can mushrooms, sliced and drained
3 T. butter
1 tsp. dried tarragon, or to taste
1/2 tsp. garlic powder
1/2 tsp. salt
3 T. flour
1-12oz can evaporated milk
1 1/2 C. Bountiful Barley cooked according to package directions
1 lb. pkg. Jennie-O Country Roast Turkey Tenderloin, cooked and cubed
1 1/2 C. grated Swiss cheese, divided
1/2 C. Almonds, sliced
Preheat oven to 350*. In large skillet, sauté onion, peppers and mushrooms in butter. Add seasonings and flour; stir constantly until bubbly. Gradually stir in milk. Mix in Bountiful Barely, turkey, 1 cup cheese and nuts; place in 2 quart casserole dish. Top with remaining cheese. Cover; bake 30 minutes, until heated through. Uncover; bake 5 minutes.
Yield: 6-8 servings.
