This has been our signature dish for 23 years.
4 cups Cooked wild rice or blend (1 ½ cup raw product)
½ cup chopped celery
½ cup Chopped broccoli
½ cup red pepper, chopped
4 green onions slice
1 large or 2 med. apples chopped
½ cup dried cranberries
½ cup toasted slivered almonds
Salad Dressing
½ cup light salad dressing
½ cup yogurt
1 Tablespoon lemon juice
1 to 3 teaspoon of sugar
¾ teaspoon celery salt
¼ teaspoon ground pepper
Cooking wild rice or blend: 1 cup of wild rice or blend, to 5 cups of water.
Bring water to boil, add wild rice/ blend, reduce heat to hard simmer for 35 to 45 minutes.
DO NOT COOK THE WATER OUT! Keep product covered in water at all times. (Think Pasta)
Don’t use a lid to avoid boiling over, check for consistency of texture.
When cooked to your satisfaction drain off excess water.
While the wild rice or blend is cooking:
In a separate bowls, combine salad dressing ingredients. Combine vegetables except apples and almonds.
When wild rice or blend has cooled, blend vegetables and cranberries with salad dressing. Add apples and almonds last. Toss all ingredients together, chill before serving. Enjoy! Bon Appetite
