1/2 C. margarine
1 C. sugar
1 egg, beaten
2 C. flour sifted
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
2 T. hot coffee
1 tsp. baking soda
1 C sweet applesauce
1/2 C. raw chopped cranberries
1 C. wild rice, cooked
1 tsp. vanilla
Preheat oven to 350*.
Cream the sugar and margarine, slightly. Dissolve baking soda in hot coffee. Add beaten egg and coffee to sugar and margarine. Blend dry ingredients. Alternately add vanilla, applesauce, cranberries and wild rice. Grease and flour the loaf pans. Bake 45 minutes or until done.
