1 lb. bulk highly seasoned sausage (or ½ lb. seasoned and ½ lb. mild sausage)
1 onion, thinly sliced and sautéed
1 lb. fresh mushrooms or 3 cans cut mushrooms, sautéed
1 C. wild rice, cooked according to package directions
3 cans cream of chicken soup
Chow mien noodles
Add sausage to onion and mushrooms. Simmer for 30 minutes; pour off some fat, if necessary. Add rice and soup; place in casserole dish. Bake at 300* for 45 minutes; pimento may be added, if desired. Serve with noodles.
Yield: 10-12 servings.
